80 °C (green tea)

— green tea is a popular tea variety that is made from the same bushes as black tea, but with a different processing method. It undergoes very little fermentation, unlike black tea. While the temperature range for brewing green tea is quite wide, from 61 °C to 87 °C and even higher for some varieties, the optimal temperature for brewing is 80 °C. This allows the tea to develop its full flavor without overheating.

It's worth noting that the temperature of 80 °C is also suitable for brewing oolong tea, which fall in between the yellow and black varieties with a medium level of fermentation. However, the recommended brewing temperature may vary depending on the specific degree of fermentation, with higher fermentation requiring higher brewing temperatures. For lightly fermented oolong varieties, 80 °C is the maximum recommended temperature, while for heavily fermented ones, it's optimal.
