Frying surface

— a device with a working part in the form of a flat or corrugated plane heated to high temperatures. Such a plane usually has sides on three sides to prevent oil, grease and other liquids from escaping; there is no rim on the front side, so that fried foods can be easily pry with a spatula. In fact, the frying surface is an industrial version of a frying pan — for mass cooking, it is more convenient to use such equipment than traditional frying pans.
