prices on 60 models— at first glance, musat can be confused with a file: it has a characteristic handle and a rod, usually of a round or oval section. A feature of such tools is that they are not intended for sharpening, but primarily for dressing knives — leveling the cutting edge and eliminating burrs (deformation can significantly impair the working properties of even a sharp knife). However, some musats also have a noticeable abrasive effect. Such devices can be used almost every day: for example, many professional chefs go through the knives before each “session” of cooking. However it must be borne in mind that the use of musat is limited to steel with a hardness of 50 to 60 HRC: they are ineffective on too hard blades, and unreasonably much material is removed from too soft blades.
