The main advantages of using metal trays in food dehydrators are their durability and resistance to overheating. However, these advantages are often not significant, and metal trays tend to be more expensive compared to plastic ones. Additionally, if the metal trays are designed as separate compartments, they are usually opaque, making it necessary to open the compartments to check on the drying progress, which can disrupt the process by lowering the temperature. This limitation is not applicable to models with a rear fan/heater that typically have a transparent door, but such devices tend to be more expensive. As a result, the use of metal trays in food dehydrators is now rare and is mainly found in higher-end models.
