Wooden cutting boards

Wood has several significant drawbacks. The tree is subject to mechanical wear, so the work surface must be grinded from time to time with emery to level it. Additionally, wood is hygroscopic, wood boards absorb both odours and food juice, so they must be regularly subjected to special sanitation.
