Cezve
— utensils for making coffee in an oriental (Turkish) way; another name for such dishes is “dzhezva”. The traditional Turk looks like a small metal jug with a wide base, walls tapering upwards and a sharp expansion at the top edge. The classic material for such a vessel is copper, but there are also Turks on the market from other materials, as well as those that differ in shape (some of them, for example, have almost the same width over the entire height).For Turks, coffee of the finest grinding is used; the drink is brewed on fire right in the vessel. Initially, oriental coffee was prepared on hot sand by the fire, and many consider this method to be the only correct one; in modern conditions, this recipe is recreated using a special brazier with fine sand. However, it is allowed to use more familiar heaters, including gas and electric burners; and the difference in taste between coffee "on the sand" and "on the stove" is often due to self-hypnosis rather than real differences between the two versions of the drink. In general, the finished coffee has a rich taste, besides it is not filtered and contains a large amount of grounds.
