Perris Bergamotto di Calabria contains the precious raw material Bergamot sponge whose extraction is still carried out through a manual process by cutting the fruit in half and removing the pulp with a special curved cutter. Then compressing the peel on a natural sponge with a rotary movement in order to collect the essence. The essence that is obtained is the best part, more delicate and more complex than that extracted with the peeler and is characterized by fruity and floral notes of jasmine.
